Green Salad with Edamame and Cherry Tomatoes Over Brown Rice (serves 2)

INGREDIENTS

  • 6 cups of mixed baby greens or baby spinach 

  • ¼ red onion

  • 1cup of halved cherry tomatoes 

  • 1 ¼ cups of thawed edamame beans

  • 1/3 cup hemp seeds or sunflower seeds

  • 1/3 cup dried cranberries (optional)

  • 1 ½ cups of warm brown rice

Apple Cider and Basil Vinaigrette: Mix 2 TBSP of EVOO, 2 TBSP apple cider vinegar, 1 clove finely chopped garlic, chopped fresh basil, 1 tsp raw honey, salt and pepper (add to DRESSINGS and DIPS)

INSTRUCTIONS

  • Prepare 1 cup of brown rice according to directions

  • In each bowl add ¾ cups warm brown rice and serve salad over the rice.  Drizzle with 2 tbsp apple Cider and basil vinaigrette
