Mango Coconut Chia Pudding (serves 4-5)

INGREDIENTS

  • 1 fresh large ripe mango

  • 1 13oz. can coconut milk

  • 2 TBSP maple syrup divided (use only 1TBSP if mango is very sweet/ripe and add to coconut milk mixture only)

  • 5 Tbsp chia seeds

  • Blueberries and mint leaves for garnish\

INSTRUCTIONS

  • Place mango in a blender or use an immersion blender to process until smooth. Add 1 TBSP maple syrup if you like it sweeter. Refrigerate while you continue recipe.

  • In a bowl, mix the coconut milk, chia seeds and maple syrup. Mix until no lumps remain. Place in fridge to thicken for 30 min.

  • In pretty glasses, using a spoon, drop milk/chia mixture at the bottom of each glass and flatten. Pour mango puree on top. Garnish with blueberries and mint leaves.
