Simple Green Salad with Red Peppers and Feta Cheese Crumble (serves 2)

INGREDIENTS

  • 5 cups of chopped romaine salad

  • 1 cup finely chopped kale

  • ½ red pepper chopped or sliced

  • ¼ red onion

  • 1 cup cucumber

  • 1 green apple chopped

  • Lightly toasted pecans

  • 1/3 cup feta cheese crumbled

  • Bunch of sunflower sprouts or sprouts of your choice

Classic Vinaigrette: Mix 2 TBSP of EVOO, 2 TBSP apple cider vinegar, minced garlic, 1 tsp Dijon mustard, 1/3 cup of fresh basil  (or 1 tsp pesto), 1 tsp pure maple syrup, Himalayan salt and ground pepper.
