Simple Green Salad with Red Peppers and Feta Cheese Crumble (serves 2)
INGREDIENTS
5 cups of chopped romaine salad
1 cup finely chopped kale
½ red pepper chopped or sliced
¼ red onion
1 cup cucumber
1 green apple chopped
Lightly toasted pecans
1/3 cup feta cheese crumbled
Bunch of sunflower sprouts or sprouts of your choice
Classic Vinaigrette: Mix 2 TBSP of EVOO, 2 TBSP apple cider vinegar, minced garlic, 1 tsp Dijon mustard, 1/3 cup of fresh basil (or 1 tsp pesto), 1 tsp pure maple syrup, Himalayan salt and ground pepper.
