Tabouleh and Red Cabbage Salad (serves 4 as a side or 2 as a meal)

INGREDIENTS

  • 1 bunch od curly parsley very finely chopped

  • ¼ small red onion finely chopped of finely sliced

  • 1 cup of baby tomatoes

  • 1 cup chopped cucumber

  • 1/2 cup of hemp seeds  (sunflower seeds or bulgur wheat)

  • 1/3 cup finely chopped fresh mint

    Pomegranate Vinaigrette: Mix 3 TBSP EVOO, juice of 1 lemon, 2 TBSP pomegranate concentrated juice, Himalayan salt and ground pepper. Taste and add to taste. (add to DRESSINGS and DIPS)

INSTRUCTIONS

Mix all ingredients and drizzle with vinaigrette to taste  

Note: As a meal, you can add protein such as organic chicken breast, soft boiled eggs or wild salmon
